Supercritical fluid extraction (SFE), primarily using carbon dioxide (CO₂), has emerged as a revolutionary technology in the food industry due to its ability to produce high-quality, solvent-free extracts. Operating above CO₂’s critical point (31.1°C and 73.8 bar), this method selectively extracts bioactive compounds without thermal degradation, making it ideal for food processing, flavor enhancement, and functional ingredient production. Supercritical extracts are widely used in food additives, nutraceuticals, and natural preservatives, aligning with the growing consumer demand for clean-label and sustainable products.

Extraction of Natural Flavors and Fragrances

Supercritical CO₂ extraction is extensively used to obtain natural flavors and fragrances without chemical solvents:
Vanilla, citrus, and mint extracts retain their volatile aromatic compounds, providing superior flavor profiles for beverages, confectionery, and baked goods.
Hop extracts for beer brewing are efficiently isolated, enhancing bitterness and aroma without residual solvents.

Omega-3 fatty acids from algae and fish oil are concentrated without oxidation, making them ideal for fortified foods and supplements.
Antioxidants (e.g., polyphenols from green tea, grapes, and berries) are extracted with high purity for use in functional beverages and snacks.
Capsaicin from chili peppers, used in weight management and pain relief products, is obtained without organic solvent contamination.
Phytosterols from plant oils, which help reduce cholesterol, are isolated more efficiently than with traditional methods.
These extracts are incorporated into dietary supplements, sports nutrition products, and fortified foods to enhance nutritional value.

Decaffeination and Fat Modification

Coffee and tea decaffeination: Supercritical CO₂ selectively removes caffeine while preserving flavor compounds, offering a cleaner alternative to chemical solvents like methylene chloride.
Reduction of fats and cholesterol: SFE is used to extract excess fats from dairy products and meats while retaining nutritional quality.
Production of low-fat snacks: Supercritical extraction modifies the lipid content in ingredients like cocoa powder and potato chips without compromising taste.

Natural Preservatives and Colorants

Essential oils (e.g., oregano, thyme, and rosemary) with antimicrobial properties are used as natural preservatives in meat, dairy, and ready-to-eat meals.
Carotenoids (e.g., beta-carotene from carrots and lycopene from tomatoes) are extracted for use as natural food colorants, replacing synthetic dyes.
